EGG CURRY
Egg curry is a simple yet delicious delicacy. It is very tasty to be served with rotis and good to go with rice.


Ingredients:
 
1 onion chopped
1 tomato chopped 
1/2 cup green peas 
ginger-garlic paste 
4 hard-boiled eggs
2 boiled potatoes
1/2 cup coriander leaves
salt per taste
1 tsp turmeric powder 
1 tsp cumin seeds
2 tsp cumin-coriander powder 
1/2 tsp red chilli powder
1/2 tsp garam masala 
5 tbsp oil

Recipe:
 
Frying eggs
1) Heat 2 tbsp of oil in a pan.
2) Add a pinch of turmeric powder, cumin-coriander powder and chilli powder
3) After 20 sec fry eggs in oil. Make some holes on egg with the help of a fork.
4) Fry eggs till it is golden brown in color.
5) Transfer eggs and oil with spices in a bowl.

Curry
1) Heat 3 tbsp of oil in a pan.
2) When oil is hot, add cumin seeds.
3) When it turn slightly brown, add turnmeric powder.
4) Add onion, and fry till it soften.
5) When the onion is slightly golden brown, add cumin-coriander powder and ginger-garlic paste.
6) At this stage, you can add some green chillies to make it hot.
7) Fry until raw smell of ginger-garlic goes off.
8) Add red chilli powder.
9) When spices are cooked properly, add green peas.
10)Crush boil potatoes into small pieces and add on it.
11)Fry for few minutes.
12)Add tomato and cook until it soften under low heat with lid on.
13)When tomato is cooked, fry for few minutes.
14)When potato comes together, add water.
15)Adjust the consistency for gravy and add salt.
16)Let it come to boil.
17)When oil starts to float on the top, add garam masala and coriander.
18)Mix it properly.
19)Add fried eggs with oil and spices on curry.
20)Cook it for 2 more minutes.
21)Turn the flame off and serve it.
