It is ready to eat pickle which is very tasty and good to go as a side dish with rice, roti or beaten rice. The essence of spices with a hit of tangy flavour makes this dish stand out. The recipe is very simple and quick.


Ingredients:

Baby Okra/lady’s finger    200 gms

Boiled potato  diced        2 medium size

Chopped onion            1 medium size

Fresh coriander leaves    Handful

Green chilies chopped    2-3 

Lemon juice                       2-3 tbsp.

Toasted Sesame seed powder ½ cup

Fenugreek seeds            1 tsp

Salt                                    As per taste

Red chili powder          1 tsp

Coriander powder         1 tsp

Cumin powder            1 tsp

Turmeric powder            2 tsp

Oil                                    3 tbsp.


Recipe:

1. Add oil in a hot pan.

2. When the oil is heated, crack fenugreek seeds and let it turn black.

3. Add turmeric powder.

4. Add okra and fry for 2 minutes.*

5. Cover with lid and let it cook for 2-3 minutes under medium flame.

6. Check okra and cook uncovered to retain the green colour.

7. When okra is cooked, add boiled potato and mix.

8. Cook for a few minutes and add salt.

9. Add remaining spices; coriander powder, cumin powder, and red chili powder.

10. Stir properly to coat the spices well.

11. Turn the flame low and add onion and green chilies.

12. Cook it just until the onion is softened.

13. Turn off the flame and let it cool down a bit.

14. Add sesame seed powder and lemon juice.

15. Mix properly and serve it.

*Boil the okra and fry with minimum oil as per preference.

Sesame seed powder:

1. Toast the sesame seeds on a pan on medium flame

2. Keep stirring continuously not to burn the seeds

3. When seeds start to pop up, turn the flame off and stir 

4. The heat on the pan will do the job

5. Once it is done, you should be able to smell a strong aroma 

6. Keep it aside to cool down

7. Grind it to powder
