Bara (Lentils deep-fried snack)
Bara is an authentic savory fried Newari delicacy. It is prepared from split black lentils with minimum ingredients. It is prepared on special occasions and celebrations. It can be served in breakfast or snacks and a perfect recipe to start your parties.



Ingredients
Lentils paste 1 cup
Garlic cloves 4
Ginger         1 inch
Salt                 1 tsp

Recipe
Lentils paste

1) Soak split black lentils overnight
2) Rub lentils between your palm to remove its cover
3) Rinse it out with water to discard its cover
4) Repeat the process until you are left with clear white lentil
5) Transfer it into a mixing jar
6) Add garlic and ginger
7) Blend it into a thick paste (use only 3 or 4 tablespoons of water if needed)
8) Transfer the paste into a clean deep vessel
9) Add salt
10) Aerate the paste by beating with a spoon for 2-3 minutes for fluffy Bara
11) Cover and let it rest for half an hour


Frying Bara

1. Heat oil in a deep saucepan
2. Dampen your hands with water in a bowl (it will avoid sticking of the mixture on hands)
3. Take about 2 tablespoons of portion and make it smooth like a round ball by placing on two hands
4. Take the ball on your non-dominant hand and place it on the palm
5. Flatten the ball with the dominant hand
6. Poke a finger into the center to create a donut shape
7. Transfer into the other hand and gently slide into the oil
8. Fry until it turns light golden brown in color
9. Flip the side and cook it on the other side
10. Remove and drain the oil
11. Place it on a plate with a paper towel
12. Serve with your favorite sauce of dips
